Happy 2016!!!

If you are reading this post, I know you successfully crossed into 2016 and I want to wish you a Happy New Year. 🙂
I am so glad you made it. Many have died in the past year but God kept you and for that, we should be eternally grateful.

2016 will come with a lot of blessings and success for us all. Did I hear an “Amen”? 🙂 I intend to work even harder, churning out recipes and making amazing photos. I have come to discover that it is not just all about cooking for me, it is also about the photography.

The combination of both is ART to me. So, I intend to bring more amazingly delicious recipes as well as breath taking photos. I have been privileged to meet with some wonderful photographers who are giving me pointers and I also want to please you esthetically.

There is a lot I want to do this year but I’d rather let them unfold at the right time. I am not one to lay all my cards on the table. I love to surprise.

Wondering what I have on the spread (in the picture)?

I made some delicious Coconut Rice.

Great tasting Pepper Soup but I swapped the fish for goat meat.

A spicy and pleasant Chicken Curry. This is a favourite for my husband. He eats it with anything rice or pasta.

A huge pot of mouth watering Fried Rice but I used different bell peppers and seasoned my meat stock with black pepper and Cayenne pepper to get an absolutely different flavour. I reduced the quantity of curry in the recipe, so you can see it it not green in colour like the Nigerian fried rice. I always tweak recipes. 🙂 Shoot! That is why I am a food blogger and recipe developper. 😀

I made some salad and did a mix of mayo and ketchup to get my own Thousand Island sauce. 3 tablespoons of Mayo to 1 tablespoon of ketchup and a few drops of vinegar.

Drinks and fruits were aplenty. 🙂 Too bad my dessert; some absolutely delicious ice cream and warm chocolate cake did not make the photo.
