The Nigerian egg roll is a common snack found in most parts of Nigeria. It is easy to prepare, does not need too many ingredients and is delicious. It is filling and can be enjoyed with any beverage of your choice.

A measuring scale
150g of plain flour
50g of margarine
50g of Sugar
50ml of water (room temperature)
1/2 tsp. of baking powder
Pinch of salt
Vegetable oil (for deep frying)
1/4 tsp. of powdered mixed spices
Boil the eggs (hard boiled) and remove the shell.
Sieve the flour into a bowl. Add the sugar, baking powder and salt.
Add the mixed spice (if used). Mixed it all together properly and then, add the margarine.
With the tip of your fingers, blend in the margarine into the dry ingredients until it looks like bread crumbs. Make a well in the centre and add a little part of the water.
Mix and knead with your hands until the dough is elastic. Divide it into four equal balls (this helps you get the same amount of dough for wrapping up the eggs). Dust the board and rolling pin with flour and place a dough ball on the board to be rolled out with the rolling pin.
Roll out the dough on the board to have a thickness of 1/2 cm. Place an egg in the middle and gently lift all the edges to wrap over the egg. Removed excess dough at the top and roll on your palms to get a circular shape.
Place the rolled up eggs on a plate dusted with flour and allow to proof for five minutes. Heat up oil and test hotness with a little piece of leftover dough. fry the egg rolls over medium heat for 5 – 10 minutes and drain on a paper napkin.
